Ingredients:

15 oz. pumpkin puree

1/3 c. vegetable oil or applesauce

1 tsp. vanilla

1/3 c. water or unsweetened almond milk

1/2 - 3/4 c. sugar

2 c. flour

1 tsp. baking soda

1 tsp. baking powder

1/2 tsp. salt

1 tsp. cinnamon

1 tsp. ginger

1/2 tsp. nutmeg

1/2 tsp. allspice

1/8 - 1/4 tsp. clove



Instructions:

1. Preheat oven to 350 degrees.

2. In a medium mixing bowl, combine pumpkin, oil/applesauce, vanilla, sugar, and water/milk, and mix together well.

3. Combine flour, baking soda, baking powder, salt, and spices. Stir into wet mixture, but don't overmix. If mixture seems too thick, add milk/water. 

4. Pour batter into greased loaf pan and bake for about 55-60 minutes, until done in center. (Or about 35 minutes for small loaves.)
