Ingredients:
3-4 bananas, mashed
1/3 c. vegetable oil or applesauce
1/3 c. sugar
1 tsp. vanilla
1 3/4 c. flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/4 tsp. nutmeg
1/4 c. almond milk or water, if needed
1 c. pecans, chopped (optional)
Instructions:
1. Preheat oven to 350 degrees.
2. In a medium mixing bowl, mash 3-4 bananas. Add oil/applesauce, vanilla, and sugar, and mix together well.
3. Combine flour, baking soda, baking powder, salt, spices, and chopped pecans, if desired (reserve some to top with). Stir into wet mixture, but don't overmix. If mixture seems too thick, add milk/water.
4. Pour batter into greased loaf pan and bake for about 50 minutes, until done in center.
