Ingredients:
6-8 potatoes
4 oz. cream cheese
2 Tbsp. butter
2 c. shredded cheddar cheese
1/4 c. buttermilk
1/4 c. sour cream
1/2 c. grated parmesan cheese
1/2 c. bacon bits
1/2 pkg. dry ranch mix
1/2 tsp. salt
1/4-1/2 tsp. pepper
1/2 tsp. seasoned salt
Instructions:
1. Peel and cut up potatoes. Boil until fork tender.
2. Drain and return to pot. Add butter and cream cheese. Let sit to warm and soften. Gently mash together.
3. Add sour cream, buttermilk, salt, pepper, seasoned salt, and ranch mix. Stir together, leaving some chunks.
4. Fold in bacon bits, 1 c. shredded cheese, and parmesan cheese.
5. Spread into casserole dish and top with remaining cheese.
6. Bake at 350 degrees for 25-30 minutes, until cheese melts and starts to brown.
