Ingredients:

¾ c. (1 ½ sticks) butter, softened

1 c. sugar

2 eggs

1 tsp. vanilla extract

2½ c. flour

1 tsp. baking powder

½ tsp. salt

 

Instructions:

1. In large bowl, cream together butter & sugar for a few minutes. 

2. Beat in eggs & vanilla. 

3. Stir in flour, baking powder, & salt. Cover and chill dough for at least 1 hour.

  (Before chilling, I like to scoop half of the dough onto a long sheet of plastic wrap, then fold over the plastic wrap and roll out the dough to ¼”-½” thickness, then refrigerate to firm up before cutting out cookies. Less mess!)

4. Preheat oven to 350 degrees. If you didn't roll out in plastic wrap before: Roll out dough on floured surface. Work flour into dough until not sticking to surface or rolling pin, and roll out to ¼”-½” thickness. 

5. Cut out shapes and place on parchment paper-lined cookie sheet.

6. Bake 7-8 minutes (depending on thickness); remove before edges start to brown. Remove onto wire racks to cool. They will continue to firm up.
