Ingredients:
1 lb. spaghetti noodles
1/2 - 1 lb. bacon, diced
2 eggs + 3 yolks
1-2 cloves garlic, chopped/grated
1 cup grated Parmesan cheese (fresh is better)
1/4 tsp. salt & pepper, to taste
Instructions:
1. In large skillet, brown diced bacon. Add garlic. Stir and cook another 3-4 minutes. Do not drain. Meanwhile, boil noodles until al dente.
2. In a medium bowl, whisk together eggs and 1/2 c. of the pasta cooking water. Stir in cheese and pepper.
3. Reserve another 1c. pasta water. Drain pasta and add to bacon. Pour egg mixture over and continue stirring to coat pasta until it thickens and combines. Add more pasta water as needed.
4. Serve and top with additional cheese.
