Ingredients:
Crust (enough for 2 pies):

2 c. flour

2/3 c. shortening

1 tbsp. sugar

1/2 tsp. cinnamon

1/2 tsp. salt

1/2 c. cold water

 

Filling (enough for 2 pies):

2 c. (29 oz.) pumpkin puree

3 eggs + 1 yolk

1/2 c. white sugar

1/2 c. brown sugar

1 tsp. salt

1 tsp. cinnamon

1/2 tsp. nutmeg

1/4 tsp. ground cloves

1 1/2 c. milk

1/2 c. (4 oz,) heavy cream

 

Instructions:

Crust:

1. Combine flour, sugar, cinnamon, and salt. Fork in shortening until crumbly. Add water and knead.

2. Roll out dough and place in pie plate. Bake at 350 degrees for 20-30 minutes.

Filling:

1. Blend together all filling ingredients and pour into prepared pie crust.

2. Bake at 425 degrees for 10 minutes, then reduce temperature to 350 degrees and bake another 45 minutes.
