Ingredients:
1 1/2 c. milk
1 stick butter, cut into pieces
1/2 c. sugar
1 pkg. active dry yeast
1/2 c. warm water
3 eggs, lightly beaten
1 1/2 tsp. salt
6 c. all-purpose flour, plus extra for dusting
Instructions:
1. In small saucepan, bring milk and butter to a simmer. Stir in sugar until dissolved. Remove from heat and let cool.
2. Dissolve yeast in warm water and let sit until foamy. (leave room for it to expand)
3. Combine milk mixture, eggs, yeast, salt, and 3 c. flour in a mixer with the dough hook attachment. Mix until smooth. Add remaining flour, 1/2 c. at a time, and mix until a smooth ball forms.
4. Remove from the bowl and knead by hand on a floured surface for about 5 minutes. Place in greased bowl, cover, and let rise in warm place until doubled in size, about 30-40 minutes.
5. On a floured surface, punch down the dough, cut/separate into 32 smaller pieces and shaped into balls. Place on a parchment-lined baking sheet or in greased dish/pan. Cover again and let rise until doubled, about 30-40 minutes.
6. Preheat oven to 350 degrees. Bake rolls for about 20 minutes, until golden brown on top. Remove from oven and brush with melted butter before serving.
