Ingredients: 

1/2 c. (1 stick) butter, softened

1/2 c. white sugar

1/2 c. brown sugar, packed

1 egg

1 tsp. vanilla extract

1 c. flour

1/2 tsp. baking soda

1/2 tsp. baking powder

1/2 tsp. salt

1/2 tsp. cinnamon

1 1/2 c. oats

3/4 c. raisins


Instructions: 

1. Cream together wet ingredients (butter, sugars, egg, vanilla). Beat until fluffy and color lightens. 

2. Add dry ingredients (flour, soda, baking powder, salt, cinnamon) and stir together until no flour is visible (do not over-mix).

3. Add oats and raisins and stir to incorporate. 

4. On a baking sheet lined with parchment paper, drop 1 1/2" - 2" scoops of dough, about 2" apart. Bake at 350 degrees for 13 minutes until golden, but still moist beneath cracks on top.

5. Remove from oven and let cookies sit on baking sheet at least 2 minutes before transferring to a wire rack to cool. Makes about 24 cookies.
