Ingredients:

1 lb. ground beef (or sub 1/2 lb. ground sausage)

1 yellow onion, chopped

1 Tbsp. olive oil

3 cloves garlic, minced

2 Tbsp. tomato paste

24 oz. marinara sauce

2 tsp. dried parsley

1/2 tsp. dried oregano

1 tsp. dried basil

7 c. chicken (or vegetable) broth

9 lasagna noodles, broken into bite-sized pieces (or 8 oz. pasta of choice)

2 c. fresh spinach leaves (optional)

10 oz. ricotta cheese

1 c. shredded mozzarella cheese

1/2 c. grated parmesan cheese

 

Instructions:

1. In a large pot over med.-high heat, cook ground beef (& sausage, if using) until browned. Season with salt & pepper as you cook. Drain grease and remove meat from the pot. 

2. Add olive oil to pot and heat over medium heat. Sauté diced onions for about 5 minutes, stirring occasionally. Add in minced garlic and cook another 1-2 minutes. 

3. Stir in tomato paste, marinara sauce, spices, and broth. Return meat to pot. 

4. Bring to boil
