Ingredients:

1 stick butter, softened

2 c. sugar

1 c. buttermilk

2 c. flour

1 c. coconut flakes

1/2 c. shortening

4 eggs, separated

2 tsp. baking soda

1 c. pecans, chopped

1 tsp. vanilla

 

Instructions:

1. Preheat oven to 325 degrees.

2. Cream together butter, shortening, and sugar. Add 4 egg yolks, buttermilk, baking soda, flour, pecans, coconut, and vanilla. Mix together until combined.

3. In medium bowl, whip the 4 egg whites to soft peaks. Fold into batter.

4. Bake for 35-45 minutes, until toothpick comes out clean.

 

* Goes great with cream cheese icing, with pecans mixed into icing. Yummy!
