Ingredients:

Casserole:

1 loaf cinnamon bread, cubed

8 oz. cream cheese, cubed

8 eggs, lightly beaten

2 1/2 c. milk, warmed

6 tbsp. butter, melted

1/4 c. maple syrup

Syrup:

1/2 c. sugar

4 tsp. corn starch

1/2 tsp. cinnamon

1 c. apple cider

1 tbsp. lemon juice

2 tbsp. butter

 

Instructions:

1. CASSEROLE: Arrange half of the bread cubes in a greased 9"x13" baking dish. Layer cream cheese cubes, and then remaining bread.

2. Whisk together eggs, milk, butter, and syrup. Pour over bread. 

3. Cover and refrigerate overnight, or at least 2-4 hours.

3. Remove from fridge 30 minutes before baking. Uncover and bake at 350 degrees for 45-60 minutes, until set.

4. SYRUP: In small saucepan, combine sugar, cornstarch, and cinnamon. Whisk in cider and lemon juice.

5. Bring to a boil and stir for 2 minutes, or until thickened. Stir in butter until melted. Serve warm over casserole.
