Ingredients:
2 lbs. chicken breasts or tenders
2 sleeves Ritz crackers
¼ tsp. salt
1/8 tsp. pepper
½ c. milk
1 can cream of chicken soup
2 tbsp. sour cream
2 tbsp. butter
Instructions:
1. Place cracker crumbs, milk, and cheese into 3 separate bowls/pans. Mix salt and pepper into cracker crumbs. If using chicken breasts, cut each into 2-3 large pieces/strips.
2. Dip chicken into milk, then cheese, and then crumbs. Press into chicken. Lay chicken in a foil-lined or sprayed 9x13 dish or baking sheet.
3. Cover with foil and bake at 400 degrees for 35 minutes. Uncover and cook another 10-15 minutes, until crispy.
4. For sauce, combine soup, sour cream, and butter in medium saucepan. Heat until hot and combined. Serve over chicken.
