
Ingredients:
1 egg
1/3 - 1/2 c. milk
1/2 c. flour
1 1/2 tbsp. melted butter (+ extra for coating pan)
1 1/4 tbsp. sugar (if making sweet crepes)
1/2 tsp. vanilla (if making sweet crepes)
1/4 tsp. salt (if making savory crepes)
1/8 c. chopped herbs (if making savory crepes)
Instructions:
1. Mix all ingredients with a mixer. Refrigerate for 1 hour, until bubbles have subsided.
2. Heat a small non-stick pan and coat with butter. Pour 1 oz. batter into the center of the pan, and swirl to spread evenly.
3. Cook 30 seconds, and then flip. Cook another 10 seconds and remove to a cutting board to cool and stack.
4. Fill with sweet or savory fillings. (I like to fill with mashed strawberries and whipped cream.)
