
Ingredients:
8 oz. spaghetti
1-2 lbs. chicken breasts
1/4 c. butter
1 lb. sliced fresh mushrooms
1 med. onion
3 tbsp. flour
2 c. chicken broth
3/4 c. half-and-half
3 tbsp. dry sherry or white wine (optional)
1 tsp. salt
pepper to taste
1/2 c. grated Parmesan cheese
Instructions:
1. Cut chicken into cubes and cook in skillet with salt and pepper.
2. Meanwhile, melt butter over medium heat. Add mushrooms and onions and cook until tender, stirring frequently. Reduce heat to medium-low.
3. Add flour and cook another few minutes. Gradually add broth, stirring constantly, until mixture boils and thickens.
4. Meanwhile, boil and drain spaghetti.
5. Remove sauce from heat and stir in wine, half-and-half, salt, and pepper.
6. Add cooked spaghetti and chicken; stir gently to combine. Sprinkle with Parmesan cheese.
