Ingredients:

2 lb. boneless, skinless chicken breasts

1/3 c. Bisquick

1/3 c. seasoned bread crumbs

1/4 c. parmesan cheese

1/4 c. finely crushed cheese crackers (like Cheez-Its or Goldfish)

1/2 tsp. garlic powder

1/4 tsp. salt

1/4 tsp. pepper

2 egg whites

3 tbsp. butter, melted (or "butter" spray)

 

Instructions:

1. Preheat oven to 450 degrees. In large plastic zip-lock bag, mix Bisquick, bread crumbs, parmesan, cheese crackers, garlic powder, salt, and pepper.

2. Cut chicken into cubes (or strips for chicken fingers).

3. In a medium bowl, beat egg whites slightly. Dip chicken pieces in egg whites, and then place in bag mixture. Seal bag and shake to coat all chicken.

4. Place chicken on greased , foil-lined cookie sheet. (I put them on a greased cookie cooling rack on top of the cookie sheet, so they'll get cooked evenly on the bottom, too.) Drizzle melted butter, or spray butter, over chicken. Bake for 15-20 minutes.
