Ingredients:

1 lb. ground beef

1 17-oz. can whole kernel corn

2 eggs, beaten

1 c. small curd cottage cheese

1 tbsp. flour

1 8-oz. can tomato sauce

1/2 tsp. minced garlic (or 1 sm. clove)

1 c. grated mozzarella cheese

 

Instructions:

1. Preheat oven to 350 degrees.

2. In large skillet, cook ground beef and drain.

3. Meanwhile, spread corn in bottom of an 8x8x2" baking dish. Combine eggs and cottage cheese; spread mixture over corn.

4. Stir flour into browned ground beef and cook 1 minute. Add tomato sauce and garlic, and stir together.

5. Layer meat mixture on top of cottage cheese & eggs. Sprinkle mozzarella cheese on top.

6. Bake uncovered for 30 minutes.
