Ingredients:

4 chicken breasts

salt & pepper

1 lb. fresh mushrooms, sliced

2 tbsp. flour

2 tbsp. olive oil

4 cloves garlic, crushed

1/4 c. balsamic vinegar

3/4 c. chicken broth

1 bay leaf

1/4 tsp. thyme

1 tbsp. butter

 

Instructions:

1. Season chicken with salt & pepper. Season flour with salt & pepper. Dredge chicken in flour mixture.

2. Heat oil in skillet over medium-high heat and sauté chicken until browned on both sides.

3. Add garlic and scatter mushrooms over chicken. Continue cooking, stirring mushrooms.

4. After 3 minutes, add balsamic vinegar, broth, bay leaf, & thyme. Cover and simmer 10 minutes, stirring.

5. Transfer chicken to serving platter and cover to keep warm. Continue simmering sauce, uncovered, for 7 minutes, or until thickened.

6. Swirl in butter and discard bay leaf. Serve over chicken.
