Ingredients:

4-5 boneless, skinless chicken breasts

2 tbsp. olive oil

2 cloves garlic, crushed

1 jar marinara sauce

8 oz. shredded mozzarella cheese

4 oz. grated parmesan cheese

1 5-oz. package garlic croutons

 

Instructions:

1. Mix olive oil and garlic, and spread over the bottom of a large casserole dish.

2. Add chicken breasts. (I like to cut chicken into bite-sized chunks - it cooks quicker and is easier to eat after it's done.)

3. Pour marinara sauce over chicken. Sprinkle with half of the mozzarella and parmesan.

4. Spread croutons over the top, and sprinkle on remaining cheeses.

5. Bake at 375 degrees for about 40 minutes, until chicken is done (reaches 155 degrees). Can cover croutons with foil and bake longer, if needed.
